Modified From tankdeer's recipe on Northern Brewer
Morita Mascada Chipotle Ale
- A deep ruddish ale with a large helping of Morita and Meco Chipotles, made in the style of Rogue Chipotle Ale and modified from tankdeer's "Firestorm Chipotle Amber Ale"
Brewed on 28 March 2011, Initial Gravity: 1.060. Fermented at 60 Deg Bottled on 14 April 2011, Final Gravity: 1.010 6.5% ABV, 15 Plato Yield: 46 x 12 oz bottles Brewers: Jeff
Ingredients - Partial Mash Grains
- .5 lb Victory Malt
- 1.0 lb Crystal 40L Malt
- .5 lb Crystal 120L Malt
- .25 Munich Malt
- .13 lb Chocolate Malt
- Extract
- 4lbs LD Carlson Briess Light DME (60 Minutes)
- 3lbs Crosby&Baker Briess Golden Light DME (40 Minutes)
- Hops
- 1oz Cascade (Bittering) (60 Minutes)
- 1oz Willamette (Flavoring) (15 Minutes)
- .5 oz Willamette (Flavoring) (10 Minutes)
- Additions
- 1 Whirlfloc (10 Minutes)
- 1 Handful Morita Chipotle (1 Minute)
- a few Meco Chipotle (1 Minute)
- Yeast
- Wyeast #1764 - Pacman/Rogue
Directions: Partial Mash: - Place grains in grain bag. Heat water to 170 Deg. Place 3 qts of water in 2 Gallon cooler. Insert grain bag. Poke and prod to expose all grain to water. Cover and let sit for 45 minutes. Drain 1st wort, pour back into cooler, retrieve again and add to 1/2 gallon boiling water in brew kettle. Add < 3 qts 180 deg water to cooler (enough to return to water level from previous step). Let sparge for 5 minutes, drain, rinse through grain, drain, add to brew kettle.
Brewing
- Pot should now have boiling water + first and second wort
- @ 0 minutes, add 4 lbs DME
- @ 0 minutes, add 1 oz Cascade Hops
- @ 20 minutes, add remaining 3 lbs DME
- @ 45 minutes, add 1 oz Willamette hops
- @ 48 minutes, add 1 Whirlfloc
- @ 50 minutes, add .5 oz Willamette hops
- @ 59 minutes, add Chipotles (in muslin bags)
- @ 60 minutes remove from boil
Cool to 70 deg, strain into Fermenter. Include bagged peppers in fermenter. Add bottled water to bring wort to 5.5 gallon size. Pitch PacMan yeast @ 65-72 deg.
