10.Mossy Mire


This is Buried Castle's first venture into stouts and our first created recipe. Mossy Mire is designed to address Brewer William's two favorite flavors: Chocolate and Mint.  Mossy Mire was based on style guidelines for Sweet Stout, with the addition of sweet chocolate and mint flavors.  Cocoa powder and fresh mint are added late in the boil for flavor, along with lactose for body and creaminess. Hopville's Beercalculus was used to establish the correct ingredient proportions to meet the Stout style.
